Mix veg is a super delicious flexible dish made by frying veggies of your choice, further cooked with tomato paste and different spices. This mouthwatering dish is full of nutrition and can be made for lunch or dinner. Its usually served with roti and naan but add some raita to further enhance its taste. This wholesome sabzi can be eaten at anytime, so try it and enjoy! Other Names: Mixed Vegetable Sabzi, Mix Veg Subji, Mix Veg Fry, Fried Mix Vegetable Sabzi Ingredients: 1 cup Tomato Paste 1 cup Carrots (diced) 1 cup Green Capsicum (cut in squares) 1 cup Cauliflower (cut in medium size) 1 cup Potatoes (peeled and diced) Oil (for frying and cooking) ½ cup Green Peas (boiled) 1 tbsp Ginger Garlic Paste 1 tsp Dry Fenugreek Leaves (aka Kasuri Methi) 1tsp Chaat Masala 1 tsp Cumin Seeds (aka Jeera) 1 tsp Turmeric Powder ½ tsp Red Chilli Powder 1 tsp Coriander Powder ½ tsp Garam Masala Salt (according to taste) Instructions: 1. First wash and dry the vegetables, then cut cauliflower in medium size pieces, also peel and cut potatoes in approximately same size. Similarly cut capsicum in square pieces and carrots in same size, so that these vegetables can cook uniformly. 2. Now lets fry vegetables, for this take oil in a wok on medium high heat. Check if oil is hot enough by dipping a small vegetable piece, if it sizzles it means oil is ready for frying. We will fry vegetables in two batches because of different cooking time of vegetables. 3. For first batch fry cauliflower and potatoes together on medium high heat till they are cooked. Keep stirring and flipping them in between so that they are uniformly cooked. 4. To check if they are cooked or not, poke potatoes and cauliflower pieces with a spoon. If they are soft that means they are ready so remove them out on paper towel so that all extra oil is absorbed by paper. 5. Similarly, cook capsicum and carrots in the second batch. Fry them till they are cooked well, keep in mind they take less time to cook compared to cauliflower and potatoes. When fried well take them out on a paper towel. 6. If you don’t like oil you can also steam vegetables, I have fried them as they taste much better after frying. 7. Now lets make masala for sabzi, for this take another pan and heat 1 tbspof oil on high heat. When oil is hot put heat to low and add cumin seeds, and when they stop crackling add ginger garlic paste. 8. Now mix them and cook on low heat for around 2 mins till ginger garlic rawness goes away. When ginger garlic paste is cooked add tomato paste, turmeric powder, red chilli powder and salt. Now mix them well and cook on medium heat till all water dries out. 9. When tomato paste is cooked put heat to low and add boiled green peas and fried vegetables. Now add coriander powder, chat masala and garam masalato give nice flavors to sabzi and some kasuri methi for nice aroma. Now mix them gently so that all vegetables are uniformly covered with spices. Now cover the pan and let it cook on low heat for 4-5 mins so that vegetables absorb all flavors. 10. After 4-5 mins switch off the heat and mix sabzi a little. Now our spicy and delicious mix veg is ready, so take it out in a bowl and serve. Tips n Tricks: 1. You can change vegetables in mix veg sabzi according to your own choice. 2. You can also add paneer or tofu for making it even tastier. 3. Try it with raita to enhance the taste.
